Cool Slaw. Coleslaw. Cabbage Summers Up ~ Recipe 2 of 4
/And now we spice. Red cabbage (which looks purple) is a colorful, striking vegetable all on its own. Yet sometimes you just can't stop. Cilantro. Peppers. Jicama. Tangy lime. Now we have some coleslaw with the fire of summer.
The Recipe
1/2 head of red cabbage, shredded or chopped finely
1/3 cup of cilantro, chopped coarsely
1-2 jalapeño or Serrano pepper, minced
1 cup shredded jicama
zest of one lime
The Vinaigrette
1/3 cup olive oil
2 tablespoons white wine vinegar
1 tablespoon lime juice
salt and pepper to taste
Add chopped cabbage into one bowl with the jicama, lime, pepper, and cilantro. Mix well. Whisk vinaigrette dressing together into a separate smaller bowl. Drizzle vinaigrette over cabbage mix. Mix and serve. (Cook's note: it's fine to chill and marinate overnight)
