It's almost mandatory for a healthy food blog to have a recipe for chia seeds. So we're checking this task off our to-do list, bumping up the standard chia seed pudding recipe with some grilled stone fruit. Make it your dessert or breakfast. Happy Late Summer all!
Grilled Stone Fruit & Coconut Chia Seed Pudding
This technique works for either peaches or nectarines. We chose peaches this time.
Slice a peach in half, remove pit, and brush each side with a little honey. Grill fruit, cut side down, for about 4 minutes or until golden brown and heated through.
Chia Seed Pudding
1 cup coconut milk
¼ cup Chia seeds
3 tablespoons honey, maple syrup or agave syrup
¼ teaspoon vanilla extract
Whisk all ingredients, except chia seeds, together until mixed thoroughly. Add chia seeds. Refrigerate for 4 hours or overnight. Serve with grilled stone fruit and garnish with mint.
